Ingredients

1 cup butter , at room temperature
1 cup sugar ( white or light brown-I used a combination )
3 eggs
2 cups unbleached flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup poppy seed
1 cup milk
1 teaspoon vanilla extract
3 tablespoons fresh lemon juice
1 teaspoon grated lemon rind
1/2 cup orange juice
1 -2 tablespoon sugar
1 tablespoon fresh lemon juice
2 -3 tablespoons dry sherry ( optional ) or 2 -3 tablespoons orange liqueur ( optional )

Instructions

1.Preheat oven to 375°F. Grease and flour a 9-inch springform pan.
2.In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
3.In a separate bowl, combine flour, baking powder, baking soda, salt, and poppy seeds.
4.In another bowl, combine milk, vanilla, lemon juice, and lemon rind.
5.Alternately add flour mixture and milk mixture to butter mixture, beginning and ending with flour mixture. Beat well after each addition.
6.Pour batter into prepared pan.
7.Bake cake for 35 minutes, or until a toothpick inserted in the center comes out clean.
8.Meanwhile, combine orange juice, sugar, and lemon juice in a small saucepan. Cook over low heat until sugar dissolves. Remove from heat and stir in sherry or orange liqueur.
9.When cake is done, remove from oven, and prick the top all over with a fork. Pour the orange juice mixture over the top of the warm cake.
10.Let cake cool completely before serving.
