1 medium home grown cucumber
5 shiitake mushrooms , fresh , sliced
1 -2 tablespoon scallion , thin sliced green ( optional )
1 1/2 teaspoons sesame seeds , garnish ( optional )

Instructions

1.Cook the bean thread noodles according to package instructions and set aside.
2.In a separate bowl, mix together the rice wine vinegar, Splenda sugar substitute or sugar, soy sauce, and salt until well combined.
3.Thinly slice the cucumber and shiitake mushrooms and add them to the bowl with the dressing, along with the cooked noodles.
4.Toss everything together until the noodles and vegetables are evenly coated with the dressing.
5.Serve the sunomono cold, garnished with sliced scallions and sesame seeds if desired.
