Ingredients

6 ounces pumpkin seeds , about 2 cups ( raw , unhulled )
2 cups chicken broth or 2 cups beef broth
6 ounces tomatillos , husks removed , rinsed , and coarsely chopped
6 large leaves sorrel , rinsed , stems removed , and coarsely chopped ( lengua de vaca )
4 leaves hoja santa , stems and veins removed , coarsely chopped
8 large sprigs epazote
4 jalapenos ( to taste ) or 6 serrano chilies , coarsely chopped ( to taste )
pork fat ( approximately 1/4 cup ) or vegetable oil , for frying ( approximately 1/4 cup )

Instructions

1.In a dry skillet over medium heat, toast pumpkin seeds until lightly browned.
2.Transfer seeds to a blender and blend until a fine powder forms.
3.In a stockpot over medium heat, bring broth to a simmer and add tomatillos, sorrel, hoja santa, epazote, and jalapenos.
4.Simmer sauce for 10 minutes, then remove from heat and let cool slightly.
5.Transfer sauce to a blender and blend until smooth.
6.Strain the sauce through a fine mesh sieve into a large saucepan.
7.Heat pork fat or vegetable oil in a skillet over medium heat.
8.When hot, pour oil into saucepan with sauce and cook for 10 minutes until slightly thickened.
