Ingredients

1/2 tablespoon olive oil
1/2 cup mole , verde paste ( some prepared versions contain gluten )
2 cups chicken stock
2 chicken breasts , pre-cooked and shredded
1 cup corn ( fresh or frozen )
1 can diced green chilies
1/2 teaspoon salt ( or to taste )
1 habanero pepper , minced ( optional )
1 package corn tortillas ( 8 tortillas , 6-inch diameter )
6 ounces plain fat-free yogurt ( OR 4 oz yogurt , 4 oz dairy-free `` sour cream '' or `` cream cheese '' )
1 cup Mexican blend cheese ( shredded )
1 bag Baby Spinach ( ~6 cups uncooked leaves , cleaned )
8 sprigs cilantro
1 avocado
1 lime
fresh ground black pepper , to taste

Instructions

1.Preheat the oven to 375°F.
2.In a large saucepan, heat the olive oil over medium heat and add the mole verde paste. Cook for a few minutes, stirring constantly.
3.Add chicken stock, shredded chicken, corn, diced green chilies, salt, and habanero pepper (optional). Simmer for 10-15 minutes over low heat.
4.Place a layer of tortillas on the bottom of a 9x13 inch baking dish. Spoon half of the chicken mixture on top. Layer half of the spinach on top of the chicken mixture. Add another layer of tortillas, followed by the remaining chicken mixture and spinach.
5.Mix the plain yogurt and shredded Mexican cheese together in a small bowl. Pour the mixture evenly over the top of the casserole.
