1 lb skirt steak , cubed
1 medium onion
1 -2 garlic clove
1 sprig parsley
1 tablespoon salt ( to taste )
2 -3 pasilla chilies
4 ears corn , preferably white , cut into thirds
2 medium chayotes , cut into large chunks
4 mexican zucchini , halved and cut into large chunks
cooked rice
warm corn tortilla
finely chopped onion
lime wedge

Instructions

1.In a large pot, add the beef shank, skirt steak, onion, garlic, parsley, and salt. Cover with water and bring to a boil.

3.Add the pasilla chilies and continue to simmer for an additional 10 minutes. Remove chilies, dice, and set aside.
4.Add the corn, chayotes, and zucchini to the pot and simmer until vegetables are tender, approximately 10-15 minutes.
5.Serve hot with cooked rice, warm corn tortillas, diced chilies, onion, and a lime wedge.
