Mole De Cacahuate, also known as Mexican Peanut Sauce, is a traditional Mexican sauce that is commonly used as a condiment for meats like chicken, pork, and beef. The sauce gets its name from the main ingredient, peanuts, which give the sauce a rich, nutty flavor and a creamy texture. Unlike other mole sauces that can contain up to 30 ingredients, this mole sauce is relatively simple to make, and its ingredients are easy to find in most grocery stores. The dish originated in the north-central region of Mexico and has become a staple in many Mexican households. It's perfect for anyone looking for a new twist on classic Mexican cuisine.

Instructions

1.Preheat the oven to 350°F.
2.Remove the stems and seeds from the dried guajillo chilies.
3.In a large skillet over medium heat, warm 1 tablespoon of vegetable oil. Add the onions, garlic, tortilla, and chili peppers and cook for 5 minutes or until the onions begin to brown.
4.Put the roasted peanuts, raisins, oregano, cinnamon, and allspice in a blender. Add the cooked vegetables and blend until smooth. Add half of the chicken broth and blend again until smooth.
5.Heat the remaining 2 tablespoons of vegetable oil over medium heat in the same skillet. Pour in the peanut mixture and cook, stirring, for 5 minutes.
6.Add the remaining chicken broth, cider vinegar, and salt to the skillet. Stir until combined, then transfer the skillet to the oven. Bake for 20 to 25 minutes, or until the sauce is thickened. Remove from the oven and let cool.
7.Blend the cooled sauce again until smooth, then return it to the skillet and heat for 5 minutes before serving.
