Ingredients

6 medium red potatoes
1/3 cup olive oil
2 garlic cloves , crushed in a garlic press
1 cup feta cheese , crumbled
1/2 cup scallion , finely chopped
3 tablespoons red wine vinegar
2 tablespoons dill , finely chopped
salt & freshly ground black pepper
6 black olives ( optional ) or 6 slices roasted red peppers ( optional )
Moldavian Potato, Feta and Scallion Salad is a refreshing and flavorful twist on the classic potato salad. Instructions

1.Scrub potatoes, cut them into bite-size pieces and boil in salted water for 10-15 minutes or until tender.
2.Drain the water and let the potatoes cool to room temperature.
3.In a mixing bowl, whisk together olive oil, garlic, red wine vinegar, chopped dill, salt and pepper.
4.Add feta cheese and scallions to the same bowl and toss to combine.
5.Add the cooled potatoes to the bowl and gently stir until the dressing is evenly distributed.
6.Taste and adjust seasoning if necessary.
7.If using, garnish with black olives or roasted red pepper slices.
8.Serve chilled or at room temperature.
