2 -3 tablespoons red wine vinegar , to taste
water , to thin sauce to taste

Instructions

1.In a food processor or mortar and pestle, combine garlic, sea salt, and cumin. Pulse or grind until broken down into small pieces.
2.Add the green peppers, cilantro, and oregano and continue to pulse or grind until they are well combined.
3.Slowly add in the olive oil, red wine vinegar, and water. Continue to pulse or grind until you reach your desired consistency.
4.Taste and adjust seasoning with additional salt, cumin, or vinegar as needed.
