Mojo Cubano Brine is a traditional Cuban marinade used to flavor meats like chicken and pork. The key to this recipe is the combination of citrus and herbs, which give the turkey a bright and zesty flavor. The brining process helps to keep the meat moist and adds an extra layer of flavor to the finished dish. This recipe is perfect for Thanksgiving or any special occasion where you want to impress your guests with a juicy and flavorful turkey.

Instructions

1.In a large pot, combine all of the ingredients except for the turkey and bring to a boil. Remove from heat and let cool completely.
2.Place the turkey in a large container or brining bag. Pour the cooled marinade over the turkey, making sure to cover it completely.
3.Cover and refrigerate for at least 12 hours, or up to 24 hours.
4.Preheat the oven to 325°F. Remove the turkey from the marinade and pat dry with paper towels.
5.Roast in the oven, basting occasionally with the marinade, until the internal temperature reaches 165°F, about 3-4 hours depending on the size of the turkey. Let rest for 20 minutes before carving.

PROS

The Mojo Cubano Brine infuses the turkey with a delicious blend of citrus and herbs, resulting in juicy and flavorful meat.

The brine also helps to tenderize the turkey and makes it more forgiving if slightly overcooked.

CONS

Brining can be a messy and time-consuming process.

If you don’t have enough room in your refrigerator, finding a container large enough to hold the turkey and the brine can be a challenge.

HEALTH & BENEFITS

This dish is high in protein and a good source of iron and other essential vitamins and minerals.
The citrus in the marinade provides a good dose of vitamin C, while the garlic and herbs are known for their anti-inflammatory properties.
