Instructions

1.Preheat the oven to 150°C. Line a 9-inch cake tin with baking paper.
2.In a large bowl, mix the dried fruit, chopped apricot, crushed pineapple with juice, orange juice, mixed spice, and baking soda until well combined. Leave the mixture to soak for 30 minutes.
3.Using an electric mixer, beat the egg whites until firm peaks form. In another bowl, whisk the egg yolks until pale and creamy.
4.Stir the beaten egg yolks into the fruit mixture. Add the flour gradually until well combined. Fold in the egg whites until just combined.
5.Pour the cake mixture into the lined cake tin and smooth the surface with a spatula. Cover the cake tin with foil and bake for 1 hour and 30 minutes. Remove the foil and bake for a further 30 minutes or until a skewer inserted into the centre of the cake comes out clean.
6.Remove from oven and let the cake cool in the tin for 15 minutes before transferring it onto a wire rack to cool completely.
