Mohnkranzerl Aus Hefeteig, or Poppy Seed Rolls, are a traditional bakery staple in Austria, Germany, and Central Europe. These sweet rolls are filled with a creamy poppy seed mixture that is spiced with cinnamon, lemon, and rum for a flavor-packed breakfast pastry. The bread dough is soft and fluffy, with a slightly sweet taste of its own that melds perfectly with the nutty, rich flavor of the poppy seeds. These rolls can be enjoyed on their own or with a cup of tea or coffee, making them the perfect way to start your day on a positive note.

Instructions

1.In a medium saucepan, combine the poppy seeds, milk, butter, sugar, vanilla, salt, rum, lemon juice, lemon zest, and cinnamon. Cook over low heat, stirring frequently, for 20-30 minutes or until the mixture thickens and the milk is absorbed. Set aside to cool.
2.In a mixing bowl, combine the flour, yeast, sugar, and salt. Add the melted butter, lukewarm milk, egg, and egg yolk. Mix well until the dough forms.
3.Turn the dough on a floured surface and knead for 10-12 minutes until it becomes smooth and elastic.
4.Place the dough in a greased bowl, cover with a damp cloth and let it rise in a warm place until it doubles in size (about 1 hour).
5.Preheat the oven to 375°F. Roll out the dough on a floured surface to a 12x16-inch rectangle. Spread the poppy seed filling over the dough. Roll up the dough lengthwise and place seam-side down on a greased baking sheet, forming a circle. Brush with egg wash and sprinkle with poppy seeds.
6.Bake for 25-30 minutes or until the rolls turn golden brown. Serve warm or cool on a wire rack.
