Ingredients

8 boneless skinless chicken thighs
1 teaspoon saffron thread
1 teaspoon hot water
2 teaspoons salt
4 tablespoons lemon juice
1 small onion , roughly chopped
2 teaspoons fresh ginger , roughly chopped
1 teaspoon garlic , roughly chopped
1 tablespoon water
2 teaspoons coriander seeds
2 teaspoons cumin seeds
1 cup yoghurt , lightly whisked
1 teaspoon white pepper
1 teaspoon garam masala
1/2 teaspoon chili powder
1/2 teaspoon ground nutmeg
2 tablespoons ghee , melted

Tandoori Chicken is named after the tandoor oven in which it is traditionally cooked. It is often served with naan bread and raita, which is a yoghurt-based dip with cucumber and mint.

Instructions

1.In a small bowl, soak saffron threads in hot water.
2.In a food processor, blend onion, ginger, garlic, and water until it forms a smooth paste.
3.Dry roast coriander seeds and cumin seeds in a skillet until fragrant, then grind them into a fine powder.
4.In a bowl, mix together onion paste, spice powder, yoghurt, salt, white pepper, garam masala, chili powder, nutmeg, lemon juice, and saffron water.
5.Add chicken thighs to the mixture and coat them evenly with the marinade. Cover and refrigerate overnight.
6.Preheat the oven to 450°F (230°C). Line a baking tray with aluminum foil and place a wire rack over it.
7.Brush melted ghee over the chicken and place them on the wire rack.
8.Bake for 20-25 minutes or until the chicken is cooked through and charred in places.
