2 1/3 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder

2/3 cup brewed coffee
1/2 cup cooking oil
8 egg yolks
8 egg whites
1/2 teaspoon cream of tartar

Instructions

1.Preheat the oven to 325°F (165°C).
2.In a large mixing bowl, sift together flour, 1 cup white sugar, baking powder and salt.
3.In a separate bowl, whisk egg yolks with coffee and oil until combined. Gradually add egg mixture to the flour mixture while stirring until batter is smooth.
4.Using a stand mixer, whisk egg whites and cream of tartar together until frothy before gradually adding 1/2 cup of white sugar and whisking until stiff peaks form.
5.Gently fold the egg white mixture into the batter mixture with a spatula until no white streaks remain.
6.Pour the batter into an ungreased tube pan, tapping the pan gently on the counter to remove air bubbles if there are any.
7.Bake the cake for 60 to 70 minutes or until a toothpick inserted into the cake comes out clean.
8.Remove from the oven and place upside down on a bottle until completely cooled before removing from the pan. Serve as desired.
