Ingredients

600 g chicken ( no bones and skin )
200 g carrots
100 g leeks ( one leek )
100 g onions
4 shallots
2 garlic cloves
2 tablespoons lard ( may be replaced with butter or live oil mixture )
1 tablespoon flour
200 ml wine ( white Riesling )
10 g salt
2 g pepper
1 g nutmeg
1/3 teaspoon thyme ( dried )
1 egg yolk
100 ml cream
1 tablespoon lemon juice
2 teaspoons brandy ( sloe brandy )
20 g parsley ( finely minced )
Mme Maigret's Coq Au Vin is a traditional French dish that originated in Burgundy, France. It is a stew made from chicken cooked in red wine, typically Burgundy wine, with garlic, onions, lard, and mushrooms. Instructions

1.Preheat the oven to 150C.
2.Cut chicken into small pieces.
3.Cut carrots, leeks, onions, shallots, and garlic cloves into small pieces.
4.Heat lard in a large pot on medium heat.
5.Add chicken pieces, stir occasionally until all sides are brown.
6.Remove chicken and add onions, shallots, and garlic, saute for 5 minutes.
7.Move the onion mixture to a bowl.
8.Cook the carrot and leek in the same pot for 3 minutes.
9.Add flour and stir.
10.Add the onion mixture back and wine.
11.Add salt, pepper, nutmeg, thyme, and cook for 10 minutes
12.Put the mixture in a dutch oven, add chicken with its juices.
13.Cover with parchment paper and bake in the oven for 30 minutes
14.In a bowl, whisk egg yolk with cream, lemon juice, and brandy.
15.Add the mixture to the dutch oven and bake again for 10 minutes
16.Garnish with parsley and serve.
