Ingredients

8 cups water
1 cup rinsed lentils
1 cup uncooked rice ( I use brown rice )
1 medium onion , julienned
1/4 cup olive oil
salt and pepper , to taste

Instructions

1.In a large pot, bring 8 cups of water to a boil and add the rinsed lentils. Cook for 20 minutes or until tender.
2.Drain the lentils and set them aside.

4.In a skillet, heat 1/4 cup of olive oil over medium heat. Add the julienned onions and cook until caramelized and browned.
5.In a separate skillet, heat a dash of olive oil over medium heat and add the cooked lentils. Cook for a few minutes until they begin to brown.
6.In a large bowl, mix together the cooked rice, caramelized onions, and cooked lentils. Add salt and pepper to taste.
