Mizu Shingen Mochi is a popular Japanese dessert that is known for its transparent and jelly-like appearance. It is made from agar-agar, which is a type of seaweed that is often used as a vegan alternative to gelatin. The dessert is delicate and has a soft and smooth texture that melts in your mouth. It is often served with kinako soybean flour or roasted soybean powder, but for this recipe, we paired it with a sweet and tangy strawberry compote. The dessert is usually served chilled and is perfect for those hot summer days when you're craving something refreshing and light.

Instructions

1.Combine hot water and white sugar in a small bowl and stir until sugar is dissolved. Sprinkle agar-agar powder into the mixture and stir until it dissolves.
2.Pour the mixture into a shallow container and refrigerate for 1 hour until the mixture sets.
3.Cut Mizu Shingen Mochi into cube-sized pieces and place them in the serving bowls.
4.To make the strawberry compote, combine the white sugar, water, and arrowroot powder in a saucepan. Heat over medium heat, stirring constantly until the mixture thickens.
5.Add the strawberries, lemon juice, and zest to the saucepan. Reduce the heat and let it simmer for 5-7 minutes, stirring occasionally until the strawberries are soft and the sauce is thick and syrupy.
6.Pour the strawberry compote over the Mizu Shingen Mochi and serve chilled.
