1/2 cup cashews
2 tablespoons oil

2 cups tomato puree

1 cup cream
2 tablespoons minced cilantro
4 cups mashed potatoes
1 tablespoon butter
2 cups cauliflower florets
1/2 carrot , grated
1/4 cup peas
1/4 cup corn , cooked
1 teaspoon baking powder
2 teaspoons ground cumin
1 teaspoon ginger paste
1/2 teaspoon cayenne powder
1/2 teaspoon turmeric
salt , as needed
12 roasted cashew nuts
2 tablespoons minced cilantro
3 -4 tablespoons chickpea flour
oil ( for deep frying )
Mixed Vegetable Kofta Balls With Cashews is a traditional vegetarian Indian dish that originated in the northern part of India. Instructions

2.In the same pan, heat the butter and add hing. Once the hing starts to sizzle, add tomato puree and cook for a few minutes.
3.Add sugar, salt, turmeric, garam masala, cayenne powder and cook for few more minutes.
4.Add cream and minced cilantro, and cook until the mixture is heated through.
5.In a separate mixing bowl, combine mashed potatoes, butter, cooked cauliflower florets, grated carrots, cooked corn, peas, baking powder, ground cumin, ginger paste, cayenne powder, turmeric, and salt.
6.Mix well and form small balls from the mixture.
7.Stuff each ball with one roasted cashew nut and minced cilantro.
8.Roll the balls in chickpea flour and deep fry them until golden brown.
9.Serve the kofta balls in tomato gravy.
