Ingredients

3 cups reduced-sodium vegetable broth or 3 cups chicken broth
1 cup white wine or 1 cup additional vegetable broth
2 tablespoons butter
2 cups sliced mixed mushrooms , such as shiitake , portobello and button
1 cup thinly sliced leek ( white and pale green parts only )
1 cup arborio rice
1/4 teaspoon fresh ground pepper
1 tablespoon chopped fresh tarragon
1/4 cup freshly grated parmesan cheese
Mixed Mushroom and Tarragon Risotto is a classic Italian dish that's perfect for a cozy night in. Instructions

1.In a medium saucepan, heat the broth over low heat until hot.
2.In a large saucepan, melt the butter over medium heat.
3.Add the mushrooms and leeks. Cook and stir until the vegetables have softened, about 5-7 minutes.
4.Add the rice and stir to coat with the butter. Add the wine and cook until evaporated, about 2 minutes.
5.Add 1/2 cup of the hot broth and stir until almost completely absorbed, about 2 minutes.
6.Continue adding the broth, 1/2 cup at a time, stirring continuously and letting each addition be almost completely absorbed before adding the next. Continue to cook until the rice is tender but still firm to the bite and the mixture is creamy, about 20-25 minutes total.
7.Stir in the tarragon and Parmesan cheese. Season with pepper.
