2 cups rice vinegar
1 cup water
1/4 cup mirin
2 tablespoons pickling salt
16 black peppercorns
8 whole allspice

Instructions

1.Rinse the zucchini and cucumber, and slice both into quarter inch rounds.
2.Rinse and peel the japanese white radish and slice into quarter inch half rounds.
3.In a large glass bowl, combine the rice vinegar, water, mirin, and pickling salt. Whisk together until the salt has dissolved.
4.Add the sliced vegetables to the bowl, along with the black peppercorns and allspice. Stir together to combine.
5.Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight before serving.
