Ingredients

350 g fresh cod fish fillets , skinned
350 g smoked cod fish fillets , skinned
1 medium onion , chopped fine
40 g butter
40 g flour
570 ml milk
1 bay leaf
1 tablespoon olive oil
175 g lasagna pasta or 175 g spinach lasagna noodles
2 tablespoons chopped parsley
1 can sweet corn ( no salt or sugar added )
salt & freshly ground black pepper
40 g parmesan cheese , grated
parsley ( to garnish )
Mixed Fish Lasagna is a hearty and flavorful dish that combines fresh and smoked cod fish with lasagna pasta, sweet corn, and a creamy white sauce. It is a great way to enjoy fish for dinner, and the addition of sweet corn makes it a well-balanced meal. This recipe takes a bit of time to prepare, but the end result is well worth the effort. Instructions

1.Preheat the oven to 180C.
2.Place the fish in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 4-5 minutes until the fish is cooked through. Remove the fish from the pot and set aside.
3.In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened. Add the flour and whisk until smooth. Gradually add the milk, whisking constantly to avoid lumps.
4.Add the bay leaf and continue to cook the sauce until it thickens. Remove from heat and discard the bay leaf.
5.In a separate pot, cook the lasagna pasta according to package instructions. Drain and rinse under cold water.
6.Assemble the lasagna by spreading a thin layer of the white sauce on the bottom of a baking dish. Add a layer of lasagna pasta, then a layer of the cooked fish. Sprinkle with sweet corn, chopped parsley and season with salt and black pepper. Add another layer of lasagna pasta, then repeat the process until all ingredients are used up.
7.Spread the remaining white sauce over the top of the lasagna. Sprinkle with grated Parmesan cheese and bake in the oven for 30-40 minutes, until golden brown and bubbling. Serve hot with fresh parsley to garnish.
