Ingredients

1 cup channa dal
1 cup Urad Dal
1 yellow moong dal
1 tablespoon toor dal
2 inches ginger
8 -10 green chili peppers ( according to taste )
5 cloves garlic
1 cup palak ( fresh chopped leaves )
4 chopped onions
2 teaspoons cumin seeds
1 cup coconut , grated
1 cup mint leaf ( pudina )
salt
oil , to fry
1 teaspoon saunf

Instructions

1.Wash and soak all the dals (channa dal, urad dal, yellow moong dal, and toor dal) for 2-3 hours in enough water.
2.Drain the water and grind the soaked dals with ginger, green chili peppers, garlic, palak, chopped onions, cumin seeds, grated coconut, mint leaves, and salt to a coarse paste.
3.Add saunf to the mixture and mix well.
4.Heat oil in a kadhai or deep fryer over medium-high heat.
5.Wet your hand and take a lemon-sized dough, shape it into a ball and flatten it out using your hands.
6.Carefully drop the vada into the hot oil and fry until golden brown.
7.Drain the vadas on a paper towel to remove the excess oil.
8.Serve hot with chutney and enjoy!
