5 pounds pork butt ( shoulder roast ) cut into 2-inch slices
2 tablespoons minced garlic
1 teaspoon minced ginger
2 cups water , more if needed
1/3 cup soy sauce
1/3 cup brown sugar
3/4 cup white ( shiro ) miso

Instructions

1.Heat oil in a large Dutch oven over medium-high heat.
2.Brown pork in small batches, 3-4 minutes per batch. Remove pork from the pot and set aside.

4.Add back pork to the pot, pour in water, soy sauce, and brown sugar. Stir to combine.
5.Bring the mixture to a simmer and reduce heat to low.

7.Add the miso and stir until it’s fully dissolved.
8.Serve with steamed rice and sprinkle with chopped green onion for garnish.
