Ingredients

2 tablespoons unsalted peanuts
2 tablespoons white sesame seeds
1 tablespoon cumin seed
6 garlic cloves
1/2 inch piece ginger
1/2 cup onion , chopped
1 cup tomatoes , chopped
3 tablespoons grated fresh coconut or 3 tablespoons unsweetened dried coconut
4 tablespoons vegetable oil
2 cups bell peppers or 2 cups jalapenos , seeds and pith removed and cut into 1/2-inch wide strips
1/2 teaspoon cumin seed
1/2 teaspoon brown mustard seeds
1/4 teaspoon fenugreek seeds
1/4 teaspoon nigella seeds ( kalonji )
6 curry leaves
1/4 teaspoon turmeric powder
1 tablespoon ground coriander
1 tablespoon ground cumin
1 teaspoon cayenne powder ( or to taste )
2 cups water
1 tablespoon tamarind pulp
2 tablespoons chopped fresh coriander
1 teaspoon sugar ( optional )

Instructions

1.Dry roast the peanuts and sesame seeds in a pan until lightly golden brown.
2.Add cumin seeds and toast for a few seconds, then remove from heat and let cool.
3.Combine the roasted mixture with garlic, ginger, onion, tomatoes, and coconut in a blender to make a smooth paste.
4.Heat 2 tablespoons of oil in a deep pan and fry the bell peppers or jalapenos until lightly browned. Remove and set aside.
5.In the same pan, heat the remaining oil and add cumin seeds, brown mustard seeds, fenugreek seeds, nigella seeds, and curry leaves. Fry until fragrant.
6.Add the tomato paste, turmeric powder, coriander powder, cumin powder, cayenne powder, and cook until fragrant and oil separates.
7.Add 2 cups of water, tamarind pulp, chopped fresh coriander, sugar, and salt. Bring to a boil and simmer for 5 minutes.
8.Add the fried bell peppers or jalapenos and simmer for another 5-7 minutes or until the sauce is thick and the vegetables are cooked through.
