Ingredients

2 small charentais muskmelons
200 200 ml sherry wine , port ( approx ) or 200 ml fortified wine ( approx )
fresh mint sprig , to serve

Instructions

1.Cut the top off each charentais muskmelon and reserve. Scoop out the seeds so you have two hollow bowls.
2.Using a fork, make fine grooves into the flesh of the melons.
3.Hold the knife at a slight angle and 'carve' thin slices of the melon into the groove.
4.Repeat this pattern of groove and carve until most of the flesh has been taken out. Reserve the melon slices.
5.In a blender, puree the remaining small cubes of melon along with the sherry or fortified wine until you have a smooth, thin liquid.
6.Spoon the melon liquid into the melon bowls.
7.Garnish each bowl with fresh mint sprigs and place the melon lids back on top.
