150 ml water ( lukewarm )
salt
500 g curds ( or ricotta )
300 g potatoes ( cooked and mashed )
1 tablespoon mint ( fresh or dried , adjust to taste )
50 -100 g butter ( melted and browned )
1 tablespoon french parsley ( minced )
salt and pepper

Instructions

1.In a large mixing bowl, combine the flour, egg, and lukewarm water to make a smooth dough.

3.In another mixing bowl, mix together the curds or ricotta, mashed potatoes, mint, salt, and pepper.
4.Roll out the dough thinly on a floured surface and cut it into circles with a diameter of about 9 cm.
5.Place a tablespoon of cheese mixture onto each circle and fold the circles into half-moons. Press the edges to seal the filling.
6.Bring a large pot of salted water to a boil and cook the pasta for about 10-15 minutes until they float on the surface.
7.Drain the pasta and serve them hot with melted and browned butter and minced french parsley on top.
