Ingredients

2 tablespoons olive oil , plus a little extra for drizzling
500 g carrots , halved and cut into chunks
400 g chickpeas , drained and rinsed
2 teaspoons ground cumin
juice 1/2 lemon
1 tablespoon clear honey
1 small bunch mint , chopped
2 big handfuls spinach
100 g shelled pistachios , roughly chopped
200 g feta cheese , crumbled

Instructions

1.Preheat the oven to 180ºC/350ºF/gas 4.
2.Put the olive oil in a roasting pan and add the carrots, chickpeas, cumin, and lemon juice. Toss together and season.
3.Roast for 30 minutes, shaking the pan occasionally.
4.Scatter over the honey and half of the mint and roast for another 10-15 minutes, or until the carrots are golden and slightly caramelised.
5.Serve the carrot mixture with the spinach, pistachios, remaining mint, and feta. Drizzle with a little extra olive oil.
