Ingredients

4 -8 lamb shanks ( depending on size )
1/4 cup thick mint sauce
1/4 cup liquid honey
2 tablespoons gingerroot , grated
2 tablespoons soy sauce
2 tablespoons brown sugar
Minted lamb shanks are flavorful and aromatic, making them a perfect meal for special occasions or cozy weeknights. Instructions

1.Preheat the oven to 160C.
2.Mix the mint sauce, honey, ginger root, soy sauce, and brown sugar in a bowl. Set aside.
3.Take a large casserole dish and arrange the lamb shanks in it. Pour the sauce over the shanks and use your hands to massage it well into the meat.
4.Cover the dish with aluminum foil and put it in the preheated oven. Bake for 2 hours 30 minutes, turning the lamb shanks every hour so they are evenly coated in the sauce.
5.Remove the foil for the last 30 minutes and raise the temperature to 200C to brown the lamb shanks.
6.Remove from the oven and let cool for a few minutes. Serve hot with your favorite side dish.
