Instructions

1.In a medium saucepan, heat olive oil over medium-high heat.

3.Stir in the chicken broth, coconut milk, salt and pepper.
4.Bring to a boil, then reduce heat to low and simmer, covered, until the rice is tender and the liquid is absorbed, about 18-20 minutes.
5.Remove from heat and let stand for 5 minutes.
6.Stir in the chopped mint and cilantro, fluffing the rice with a fork to incorporate the herbs.
