10 tablespoons unsalted butter , at room temperature , plus more for the pan
3/4 cup superfine sugar
11 ounces bittersweet chocolate
1 cup all-purpose flour
8 eggs , separated
1/2 cup granulated sugar
1/3 cup water
3/4 cup best-quality apricot jam
1/4 cup Cointreau liqueur or 1/4 cup orange liqueur
whipped cream , for serving

Instructions

1.Preheat the oven to 375°F. Grease and flour a 9-inch round cake pan.

3.Add the melted chocolate to the butter mixture and mix until well combined. Add the flour and mix until just combined.
4.In a medium bowl, beat the egg whites until stiff peaks form. In another medium bowl, beat the egg yolks and granulated sugar together until light and fluffy.
5.Add the egg yolk mixture to the chocolate batter and mix until well combined. Gently fold in the egg whites.
6.Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick of cake tester comes out clean. Let cool completely in the pan.
7.Place the water and apricot jam in a small saucepan over medium heat. Bring to a boil, then allow to simmer for 5 minutes.
8.Stir in the Cointreau liqueur or orange liqueur and continue to simmer for an additional 5-10 minutes or until the mixture has thickened.
9.Remove the cake from the pan and slice horizontally in half. Spread the apricot jam mixture on the bottom half.
10.Replace the top of the cake and spread the remaining apricot jam mixture over the top. Serve with whipped cream.
