Ingredients

250 g plain flour
50 g caster sugar
175 g butter , chilled and cut into small pieces
1 large egg , beaten
1 kg wild strawberry
200 g creme fraiche
1 1/2 tablespoons icing sugar
1/2 teaspoon vanilla essence
2 tablespoons caster sugar
1 cup water
These Mini Wild Strawberry Tarts, also known as Barquettes De Fraises Des Bois in French, are the perfect dessert option for a summer gathering. The wild strawberries are the showstopper of this dish and are the perfect pairing for the sweet, creamy creme fraiche. The rich, buttery pastry is the perfect base for the fresh and flavorful strawberries and gives the tarts a decadent feel that is perfect for a special occasion. This recipe makes 24 tarts, so it is perfect for a large gathering, or you can easily halve the recipe for a smaller event.

Instructions

1.Preheat your oven to 180°C and line 24 individual tart tins with baking paper.
2.To make the pastry, sift the flour into a large mixing bowl and stir in the caster sugar.
3.Using your fingertips, rub the chilled butter into the flour mixture until it resembles fine breadcrumbs.
4.Add the beaten egg to the mixture and use a knife to bring the pastry together into a ball. Knead the dough gently for a few seconds.
5.Roll the pastry out on a floured surface to 3mm thickness and then use a cutter to cut circles to fit the base and sides of each tart tin.
6.Gently press the pastry circles into the tins and prick the base with a fork.
7.Place in the fridge for 20 minutes to chill.
8.Bake the pastry cases in the preheated oven for 10-12 minutes or until the pastry is a pale golden brown.
9.Remove from the oven and allow to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely before filling with the strawberry mixture.
10.To make the filling, wash and hull the strawberries and then slice in half and set aside.
11.In a bowl mix the creme fraiche, icing sugar and vanilla essence.
12.To the water and caster sugar in a pot over a medium heat and cook until the sugar dissolves.
13.Dip the sliced side of the strawberries into the sugar syrup and place them cut side down into the pastry cases. Spoon the creme fraiche mixture over the strawberries and serve chilled.
