Ingredients

1 sheet of store bought puff pastry ( I used Pepperidge Farm )
1 large leek ( or 2 small )
1 cup half-and-half
1 cup swiss cheese
1 egg , beaten slightly
salt and pepper
1 tablespoon butter

Instructions

1.Preheat the oven to 425°F.
2.Wash the leek and trim the top and root ends. Cut the white and light green parts into thin rounds.
3.In a skillet over medium heat, melt the butter. Cook the leek rounds until they are softened, about 5-7 minutes.
4.Roll out the puff pastry to 1/8-inch thickness on a floured surface. Cut out rounds with a pastry cutter or a glass.
5.Place the rounds on a baking sheet lined with parchment paper. Score a 1/4-inch border around each round with a knife, being careful not to cut through the pastry.
6.In a bowl, whisk together the half-and-half and beaten egg. Season with salt and pepper. Stir in the cooked leeks and shredded Swiss cheese.
7.Fill the center of each pastry round with the leek mixture, staying within the scored border.
8.Bake for 15-18 minutes, or until the pastry is puffed and golden brown.
