2 tablespoons fresh lemon juice , divided

4 cups baby arugula leaves
1 1/2 cups cucumbers , peeled , seeded and diagonally sliced

Instructions

1.Preheat the oven to 400°F (200°C).

7.In another large bowl, toss the sliced cucumbers and baby arugula leaves with the remaining tablespoon of fresh lemon juice.
8.Serve the mini meat loaves with the Greek yogurt sauce and the cucumber-arugula salad on the side.
