2 sheets puff pastry
400 g cocktail franks
homemade tomato sauce or relish
1 egg , beaten
poppy seed ( optional )

Instructions

1.Preheat the oven to 200C/400F/Gas Mark 6.
2.Lay out the two sheets of puff pastry and halve each one to create four equal rectangles. Cut each rectangle into four smaller rectangles to create 16 squares in total.
3.Place one cocktail frank in the centre of each pastry square, then top with one teaspoon of homemade tomato sauce or relish.
4.Brush the edges of the pastry squares with beaten egg and then fold over into triangles, pressing the edges together with a fork to seal.
5.Brush the tops of the pastry triangles with beaten egg and sprinkle with poppy seeds (optional).
6.Place the mini frankfurts in pastry on a baking tray lined with parchment paper and bake in the preheated oven for 10-15 minutes, or until the pastry is golden brown and puffed up.
