Ingredients

75 g unsalted butter , softened to room temperature
1/3 cup caster sugar
1 teaspoon orange zest , finely grated
1 egg
1/3 cup ground almonds ( almond meal /40 grams )
1/3 cup desiccated coconut
1/4 cup fine polenta ( cornmeal or 40 grams )
1/2 teaspoon baking powder ( gluten-free if required )
1 1/2 tablespoons orange juice , freshly squeezed for best flavour
1 1/2 tablespoons buttermilk
1 cup icing sugar , sifted
1 tablespoon orange juice , freshly squeezed is best
orange zest , thin strips for decoration ( optional )
These Mini Flourless Orange and Almond Cakes are a gluten-free, healthier take on classic almond and orange cake. Instructions

1.Preheat your oven to 170'C (340'F). Grease 8 holes of a muffin tin with cooking spray or butter.
2.Using an electric mixer, cream the butter, sugar and orange zest for 2-3 minutes until light and fluffy.
3.Add the egg and mix well.
4.In a separate bowl, mix the almond meal, coconut, polenta and baking powder.
5.Fold dry ingredients into the butter mixture.
6.Add orange juice and buttermilk and fold in until just combined.
7.Fill muffin tins using a spoon, leaving a little space at the top.
8.Bake for 18-20 minutes until golden brown and cooked through.
9.Remove from oven and cool completely on a wire rack.
10.In a small bowl, mix icing sugar and orange juice until a smooth, thick paste forms. Drizzle over the cooled cakes and top with thin strips of orange zest if desired.
