1 cup unbleached flour
2/3 cup icing sugar

1 egg

2 teaspoons orange juice

1/3 cup cranberries , fresh chopped
1/4 walnuts or 1/4 dried cranberries , chopped

Instructions

1.Preheat the oven to 350°F (180°C).
2.Mix flour and icing sugar in a medium-sized mixing bowl. Add cold butter and blend with the pastry cutter and add egg yolk and vanilla. Mix until you get coarse crumbs.
3.Add water and blend again. Roll the dough out to 1/4 inch thick on a floured surface.
4.Cut out 12 circles using a 3-inch cookie cutter and place each circle into a mini-muffin tin, shaping it to fit.
5.Mix corn syrup, granulated sugar, melted butter, orange zest and juice, egg, and a pinch of salt until incorporated in a separate bowl.
6.Add fresh chopped cranberries and chopped walnuts or dried cranberries and mix well. Fill the tart shells with the mixture.
7.Bake in preheated oven for 20-25 minutes until the filling is set.
8.Remove the tarts from the oven and cool them on a wire rack.
