24 jumbo pasta shells
1 pound lean ground beef
1 cup chopped green bell pepper

1 can dark red kidney beans , drained and rinsed
1 cup mozzarella cheese
1/4 cup prepared basil pesto
1 jar pasta sauce , warmed
1/2 cup grated Parmesan cheese
Minestrone-Stuffed Shells is a creative twist on the classic Italian soup – Minestrone and pasta. Instructions

1.In a large pot of salted boiling water, cook the pasta shells according to package directions. Drain and rinse under cold water.
2.In a large skillet, brown the ground beef over medium-high heat, breaking it up with a wooden spoon.
3.Add the chopped bell pepper, onion, and salt and cook until the vegetables are soft, about 5-7 minutes.
4.Add the drained and rinsed kidney beans to the skillet and stir to combine.
5.Remove from the heat and stir in the mozzarella cheese and pesto.
6.Preheat the oven to 375°F.
7.Fill each pasta shell with the beef mixture and place in a greased 9 x 13-inch baking dish.
8.Pour the warm pasta sauce over the top of the shells.
9.Sprinkle with the grated Parmesan cheese.
10.Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
