1 lb shin beef , with bone
5 quarts water
1 1/2 tablespoons salt
1 cup dried kidney beans
1 tablespoon olive oil
2 garlic cloves , chopped

1/2 teaspoon black pepper , ground
1 cup celery , chopped
2 cups cabbage , shredded
1 1/2 cups carrots , diced
3 1/2 cups tomatoes , canned
1 1/2 cups spaghetti , broken into pieces
1 cup peas , frozen
parmesan cheese , grated

Instructions

1.Soak the dried kidney beans overnight in water.
2.In a large pot, bring 5 quarts of water to a boil and add the shin beef with bone and 1 tablespoon of salt. Reduce heat to medium and let it cook for 2-3 hours or until the meat is tender.
3.Once cooked, remove the shin beef from the pot and let it cool. Remove the bone and cut the meat into small pieces.

5.Add minced steak and black pepper and cook for another 5 minutes until the meat is browned.
6.Add celery, cabbage, and carrots to the pot with cooked beef broth. Simmer for 20-30 minutes until the vegetables are tender.
7.Add canned tomatoes, kidney beans (without water), spaghetti broken into pieces, and frozen peas. Cover the pot and simmer for an additional 20 minutes.
8.Serve the soup hot and sprinkle grated parmesan cheese on top.
