Instructions

1.Preheat the oven to 350°F (180°C).
2.Mix the flour and potato starch together.

5.Add the flour and potato starch to the egg yolks and milk mixture and stir until combined.
6.Beat the egg whites until stiff peaks form.
7.Gradually add in 5 ounces of sugar.

10.Once the cake has cooled, slice off the top and cut it into small pieces.

12.Add 3 1/2 ounces of sugar and 1 ounce of sieved flour.
13.Stir the mixture over low heat until thickened.
14.Add the lemon zest and vanilla.
15.Spread the custard on top of the cake pieces.
16.Whip the heavy cream and confectioners' sugar together until light and fluffy.
17.Spread the whipped cream on top of the custard layer.
18.Place the remaining cake layer on top of the whipped cream.
19.For the orange syrup, combine water, rum, orange juice, and 2 ounces of sugar and stir over medium heat until mixture thickens.

21.Sprinkle additional confectioners' sugar on top of the cake before serving.
