2 tablespoons olive oil
1 large yellow onion , diced
6 -10 garlic cloves , minced
2 cans crushed tomatoes
28 ounces diced tomatoes
14 ounces tomato sauce
1 cup dry red wine
1/2 cup fresh basil , chopped
1 teaspoon fennel seed
2 tablespoons dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
salt and pepper
1 lb Italian sausage , chicken or 1 lb pork
1 head roasted garlic ( optional )
2 lbs fresh spinach , steamed and chopped or
10 ounces frozen spinach , thawed and drained
32 ounces ricotta cheese
1/2 cup parmesan cheese , fresh grated
2 eggs
16 ounces frigo part-skim mozzarella cheese , shredded
2 balls fresh mozzarella cheese , sliced
1 bunch fresh basil leaf
1 lb fresh lasagna noodle , or
1 lb dried lasagna noodle , boiled for 7mins
Mimi’s lasagna recipe has been a family favorite for many years. Made with classic Italian ingredients that everyone will love. This lasagna has layers of freshly boiled noodles, juicy Italian sausage, savory red sauce, and three types of delicious cheese. The fresh spinach adds a healthy touch to this hearty and comforting dish. Mimi’s lasagna can be made with either fresh or dried noodles, based on your preference. It is truly a crowd-pleaser that is perfect for any occasion.

Instructions

1.In a large saucepan, heat the olive oil over medium heat. Add the diced onions and minced garlic and cook for 3-5 minutes or until they are translucent.
2.Add the crushed tomatoes, diced tomatoes, tomato sauce, dry red wine, fresh basil, fennel seed, dried oregano, garlic powder, dried thyme, salt, and pepper to the saucepan. Stir ingredients together and bring to a simmer. Cook for an additional 30 minutes, stirring occasionally.
3.In a separate sauté pan, cook the Italian sausage until fully browned. Drain excess fat and add into the simmering sauce.
4.Preheat the oven to 375°F.
5.In a large mixing bowl, stir the steamed and chopped spinach, ricotta cheese, grated parmesan cheese, and eggs together until evenly combined.
6.Assembly: In a large baking dish, spoon in a thin layer of the sauce mixture. Place lasagna noodles on top of the sauce layer. Spoon the spinach-ricotta mixture on top of the pasta layer. Add another layer of pasta and top it with a thick layer of the sauce mixture. Continue alternating layers of pasta, spinach-ricotta, and sauce mixture until all ingredients are used up, making sure to end with a thick layer of the sauce mixture. Place sliced fresh mozzarella on top of the lasagna and sprinkle with shredded mozzarella cheese.
7.Cover the dish with foil and bake for 25 minutes.
8.Remove the foil and bake for an additional 25 minutes or until the cheese is golden brown. Allow to cool for 10-15 minutes before serving.
