Ingredients

225 g butter shortbread cookies
125 g butter , melted
150 g butter
150 g soft brown sugar
397 g carnation condensed milk
75 g stem ginger in syrup , drained and chopped ( optional )
115 g dark chocolate , melted
115 g milk chocolate , melted
2 teaspoons vegetable oil

Instructions

1.Preheat oven to 350°F.
2.Crush the butter shortbread cookies and mix with melted butter.
3.Spread this mixture into a 9 x 13 inch baking dish and bake for 15 minutes.
4.While the crust is baking, melt 150g of butter and brown sugar in a saucepan over medium heat.
5.Stir in the condensed milk and bring to a boil.
6.Simmer the mixture for 5 minutes until it thickens.
7.Remove from heat and stir in the chopped stem ginger.
8.Pour the caramel mixture over the crust.
9.Melt the dark and milk chocolate separately and mix with a teaspoon of vegetable oil each.
10.Pour the melted chocolate over the top of the caramel layer and spread evenly.
11.Refrigerate the dish to set the chocolate for 2 hours at least.
12.Once chilled and set, cut into squares and serve.
