Instructions

1.Rinse 1 cup of pearl barley in cold water and place into rice cooker.
2.Dice 1 medium onion, 1 tart apple, and 1/2 yellow pepper and add to rice cooker.
3.Cut 1 acorn squash into bite-sized pieces and add to rice cooker.
4.Add 1 lb of lean ground turkey (or beef or lamb) to rice cooker.
5.Add 3 teaspoons of curry powder, 1/2 teaspoon of garam masala (optional), and 1/2 teaspoon of cumin to rice cooker.
6.Pour 1 can of chicken broth and 1/4 cup of water over ingredients in rice cooker.
7.Close lid and turn on rice cooker.
8.Cook for approximately 1 hour or until liquid is absorbed and barley is tender. Serve and enjoy!
