1/2 cup yellow onions or 1/2 cup Spanish onion , chopped
1/2 cup finely chopped bell pepper ( red , yellow , green )
6 cloves garlic , minced
1/2 cup chopped fresh mushrooms
1 can diced tomatoes
1 can tomato sauce
1 1/2 tablespoons dried oregano
4 tablespoons chopped fresh basil or 2 tablespoons dried basil
2 tablespoons chopped fresh parsley

fresh ground pepper
1 lb lean ground beef
2 dashes Worcestershire sauce
kosher salt
fresh ground pepper
14 pieces manicotti , uncooked
3 1/2 cups part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese
1/4 cup graded parmesan cheese , divided ( Not the green can kind )
2 tablespoons chopped fresh parsley
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Instructions

1.Preheat oven to 375°F.
2.Heat the olive oil in a large saucepan over medium-high heat.
3.Add the onions, bell pepper, garlic, and mushrooms; cook until soft, about 5-7 minutes.
4.Stir in the diced tomatoes, tomato sauce, oregano, basil, parsley, kosher salt, and fresh ground pepper.
5.Bring the mixture to a boil before reducing the heat to medium-low; let simmer for 20-25 minutes.

10.Cook the manicotti according to the package directions until al dente; rinse under cold water and drain.
11.In a mixing bowl, combine the cooked ground beef, ricotta cheese, shredded mozzarella cheese, 2 tablespoons of parmesan cheese, parsley, kosher salt, and fresh ground pepper.
12.Fill each manicotti shell with the cheese mixture and place them in the prepared baking dish.
13.Cover the manicotti with the remaining meat sauce.
14.Sprinkle the remaining parmesan cheese over the top of the manicotti.
15.Cover the baking dish with foil and bake for 25 minutes.
16.Remove the foil and continue to bake until the cheese is melted and bubbly, an additional 10-15 minutes.
