Ingredients

6 tablespoons extra-virgin olive oil
1 small onion , cut into small dice
5 medium garlic cloves , cut into very thin slices
1 lb pepperoni , cut into thin slices
1 teaspoon fennel seed , toasted ( see NOTE )
1 teaspoon crushed red pepper flakes
8 -12 ounces canned imported Italian plum tomatoes , chopped , with their juices
1 1/2 cups low sodium chicken broth
1 fresh bay leaf

Instructions

1.In a large saucepan over medium heat, heat olive oil.
2.Add onion and garlic and cook until they are soft but not browned.
3.Add pepperoni and cook until the edges are crispy and the fat has rendered, about 8-10 minutes.
4.Add fennel seed and red pepper flakes and cook for another minute.
5.Add canned tomatoes with their juices, chicken broth, and bay leaf and bring to a simmer.
6.Reduce the heat to low and let the sauce simmer for about 30 minutes.
7.Discard the bay leaf and use an immersion blender to puree the sauce until it’s smooth, or you can strain the sauce through a fine-mesh sieve.
8.Serve over pasta with grated Parmesan cheese, if desired.
