Ingredients

2 lbs red potatoes , unpeeled & cut into 1 in . pieces
1 -2 lb sauerkraut , drained
2 apples , unpeeled , cored & coarsely chopped ( I used 1 sweet & 1 tart )
3 lbs country-style boneless pork ribs , i used bone in for economies sake but that 's just me
1 lb smoked sausage , cut into 5 slices
3/4 cup apple juice concentrate
1/4 cup dark brown sugar
1 teaspoon caraway seed
1 teaspoon ground mustard
1/2 teaspoon allspice
1/2 cup chopped onion
salt
black pepper

Instructions

1.Wash and cut potatoes into small pieces. Drain sauerkraut and chop apples into small pieces.
2.Season the pork with salt and pepper, and place it with the apples, onions, and potatoes in the crock pot.
3.In a bowl, mix apple juice concentrate, brown sugar, caraway seeds, ground mustard, and allspice. Pour over pork and vegetables in the crock pot. Top with sliced sausage.
4.Put the lid on the crock pot and cook on low heat for 8-10 hours or on high heat for 4-6 hours.
