Ingredients

1 1/2 - 2 lbs potatoes ( medium red or white )
1 medium onion , chopped
4 slices stonie 's bacon or 4 slices other bacon , cut into 1/4-inch pieces
1/4 cup sugar
3/4 teaspoon cornstarch
3/4 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon dry mustard
1/4 teaspoon ground black pepper
1/3 cup water
1/4 cup vinegar
celery seed ( optional )

Instructions

1.Wash and scrub potatoes of any dirt or blemishes.
2.Add potatoes to a large pot filled with cold water so that they are fully submerged. Add a pinch of salt to the pot.
3.Bring the pot to a boil and let the potatoes cook for about 15-20 minutes or until tender when poked with a fork. Drain the potatoes and let them cool.
4.Once the potatoes have cooled, peel them and slice them into 1/4 inch thick slices.
5.In a large skillet, cook bacon over medium-high heat until crispy. Remove bacon from the skillet and set aside, leaving the bacon grease in the skillet.
6.Add chopped onions to the bacon grease and cook over medium heat until golden brown. Add sugar, cornstarch, salt, celery seed, dry mustard, and black pepper and stir until well combined.
7.Add water and vinegar to the skillet and simmer until the mixture thickens, stirring often.
8.Remove the skillet from the heat and add the sliced potatoes and bacon to the skillet. Toss the potato salad until the potatoes are coated in the sauce.
9.Garnish the dish with extra celery seed (optional) and serve warm.
