3 eggs
1 cup granulated sugar
1/2 cup vegetable oil

Instructions

1.Preheat the oven to 350°F (175°C).

3.In a separate mixing bowl, combine the flour, cocoa powder, baking powder, salt, and ground walnuts (or chopped almonds). Gradually add to the wet ingredients and mix to form a dough.
4.Divide the dough in half, and shape each piece into a log about 12 inches long and 3 inches wide. Place the logs onto a baking sheet lined with parchment paper.
5.Bake for 25-30 minutes, or until the logs are firm to the touch.
6.Remove the logs from the oven and let them cool for 5-10 minutes before slicing them with a serrated knife on an angle into 1/2 inch thick cookies.
7.In a small mixing bowl, whisk together the confectioners' sugar, almond extract, and enough milk to make a thin glaze. Drizzle the glaze over the cookies.
8.Place the cookies back onto the baking sheet and bake for an additional 5-7 minutes, or until the glaze has set and the cookies are crisp. Allow to cool and serve as desired.
