Ingredients

2 tablespoons olive oil
4 large lamb shanks ( or 8 small )
1 onion , finely chopped
2 garlic cloves , finely chopped
1 tablespoon cumin
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 teaspoon turmeric
3 cups chicken stock
1 can diced tomatoes
fresh coriander leaves , to serve

Middle Eastern-Style Lamb Shanks is a staple recipe in Middle Eastern cuisine. Instructions

1.Preheat oven to 160°C.
2.Heat a large ovenproof pan over medium heat.
3.Add olive oil and lamb shanks, and cook for about 5 minutes or until golden brown on both sides.
4.Remove lamb from pan and add onion and garlic. Saute for 3-4 minutes or until onion is translucent.
5.Add cumin, coriander, cinnamon, and turmeric then pour in chicken stock, stirring to combine.
6.Add canned tomatoes, stir and bring to a simmer.
7.Return lamb shanks to the pan, cover and place in the oven for 2-3 hours or until the lamb is tender and falls off the bone.
8.Garnish with fresh coriander and a dollop of Greek yogurt. Serve hot.
