2 tablespoons olive oil
1 medium brown onions ( Australians ) or 1 medium yellow onion , finely chopped ( Americans )
4 garlic cloves , minced
500 g ground lamb
1/4 teaspoon cayenne pepper
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1 cup beef stock
2 medium tomatoes , finely chopped
1/3 cup pine nuts , toasted
1/4 cup fresh flat-leaf parsley , coarsely chopped
1/3 cup of fresh mint , coarsely chopped
4 small prepared pizza crust ( see Notes )
1 jar char-grilled eggplants , drained
1 cup natural yoghurt
1 teaspoon sumaq

Instructions

1.Preheat the oven to 450 degrees Fahrenheit.
2.In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, stirring occasionally, for about 5 minutes.
3.Add the ground lamb, cayenne pepper, cumin, and cinnamon to the skillet. Cook and crumble the meat until it is browned, about 10 minutes.
4.Add beef stock and stir to combine. Cook the mixture until the liquid has evaporated, about 5 minutes.
5.Remove the skillet from heat, and stir in the chopped tomatoes, pine nuts, parsley, and mint.
6.Place the prepared pizza crusts on a baking sheet. Spread the char-grilled eggplants over the top of each crust, then spoon the lamb mixture over the eggplant.
7.Bake the pizzas for around 10 minutes until the crust is crispy.
8.In a small bowl, whisk together the natural yoghurt and sumaq. Drizzle over the top of the hot pizzas. Serve immediately.
