Ingredients

1/2 cup warm water
1 package active dry yeast
2 teaspoons sugar
1 cup water
3 tablespoons olive oil
2 - 2 1/2 cups bread flour
1 2/3 cups semolina flour
1 teaspoon saffron , finely crushed
1/4 teaspoon turmeric
2 2 teaspoons anise seed or 2 teaspoons fennel seeds , may also be used
1 teaspoon salt
1 tablespoon semolina flour
2 cups ice cubes

Instructions

1.Mix the warm water, yeast, and sugar together in a small bowl and set aside for 5 minutes.

3.Add the yeast mixture to the dry ingredients and mix until fully combined.

5.Place the dough in a greased bowl, cover with a damp towel, and let rise in a warm place for 1 hour.
6.Preheat the oven to 450°F (230°C).
7.Punch the dough down and shape into a round loaf.
8.Place the loaf on a greased baking sheet and dust with the 1 tablespoon of semolina flour.
9.Slash the top of the loaf with a sharp knife and place the ice cubes in a large baking dish on the bottom of the oven.
10.Bake the bread for 45-50 minutes, or until golden brown and crispy. Remove from the oven and allow to cool before slicing.
