Ingredients

1 lb lean ground turkey
1 red pepper , diced
4 ounces mushrooms , sliced
1 small onion , diced
2 green onions , sliced
3 garlic cloves , minced
1 teaspoon paprika
1 teaspoon baharat ( see Baharat Aka Middle East Mixed Spices - the Real Mix )
1 teaspoon cumin
1/2 teaspoon salt
3 teaspoons curry powder
2 tablespoons tomato paste
1/4 cup water
2 packages goya discos
1 egg , beaten
Empanadas are a popular street food in Latin America and Spain. This particular recipe incorporates Middle Eastern flavors into the traditional empanada with the use of baharat - a Middle Eastern spice blend - and curry powder. Instructions

1.In a large skillet, cook the ground turkey over medium-high heat until browned. Remove from the skillet and set aside.
2.In the same skillet, add the red pepper, mushrooms, onion, green onions, and garlic. Cook until the vegetables are softened, about 6-8 minutes.
3.Add the paprika, baharat, cumin, salt, curry powder, tomato paste, and water. Stir to combine and cook for an additional 2-3 minutes.
4.Add the cooked ground turkey back to the skillet and stir to combine with the vegetable mixture.
5.Preheat the oven to 375°F. Line a baking sheet with parchment paper.
6.Place the goya discos on a flat work surface. Spoon 2 tablespoons of the turkey mixture onto the center of each disc. Fold the disc in half and use a fork to seal the edges.
7.Place the empanadas onto the prepared baking sheet. Brush the tops with the beaten egg.
8.Bake for 20-25 minutes, until the empanadas are golden brown and crispy. Serve hot.
